"Navy Gimlet: wow! Just wow. I'm a huge cocktail nerd and it's pretty hard to surprise me, yet to impress, but The Interval did it with this drink. This drink is the epitome of the "less is more" approach. Initially, I was going to order a different drink, but I was intrigued by a note on the menu – that this gimlet takes three days to prepare. I asked the bartender how that was possible (after all, a gimlet is just gin and lime cordial, shaken and strained), and he explained that they prepare oleo saccharum and a lime tincture with gin, and then dilute everything to about 24 ABV (yes, this gimlet is stirred, not shaken). The resulting drink is simply perfect – very limey, the alcohol is almost imperceptible despite being quite strong, perfectly balanced, and very, very bright. It delivers what a cocktail should deliver – all the flavors work together, nothing to add or take away, and the sum is so much more that just individual components. Although in this case there is essentially only one flavor – lime – it is so perfectly highlighted and expressed, complemented by the herbal notes of the gin, and at exactly the right intensity. The gimlet is a wonderful drink by itself, and here it is elevated to a new level. Superb."
