"We stopped by Atomic Cowboy on Colfax and ordered The Lola and the Cordon Bleu. Both came on their big, buttery biscuits, and wow — they are filling. The biscuits alone could almost be a meal, but they hold up really well to all the toppings without falling apart. The Lola had a great mix of flavors that felt a little unexpected but worked really well, and the Cordon Bleu was rich and comforting with the fried chicken, ham, and melty cheese. Both sandwiches were super flavorful and honestly heavier than we expected, in a good way. This place definitely has a strong morning/brunch niche — it’s the kind of food you want when you’re really hungry and want something different from the usual breakfast options. Creative, satisfying, and not trying too hard."

"We went to Atomic Cowboy back in October while visiting a friend, and I'm still thinking about it! Part of that is because we had such amazing service. When my husband told Emilee that he was conflicted between trying a biscuit and a burger, she offered to comp the burger so he could try both. It was such a delightful offer and both items were delicious! Plus, I enjoyed the enormous cinnamon roll. It was such a fun brunch, and we really appreciated the hospitality and friendly service!"
