"I visited Bistrology twice during my stay, and both experiences were fantastic! It’s rare to find a place that excels at everything, but Bistrology manages it perfectly. The coffee is absolutely amazing. I highly recommend trying the Japanese coffee—the table-side presentation was a memorable and delightful experience. Their pancakes are some of the best I’ve ever had. They were perfect whether we sat inside or outside. We even came with a large party on our second visit, and the service never faltered. The servers did a great job of staying on top of everything and making sure everyone was taken care of. Overall, it's a stellar spot for both the atmosphere and the quality of the food and service. I can't wait to go back!"

"Bistrology was absolutely amazing. The restaurant is beautifully decorated and has a great atmosphere. I ordered the most loved chicken waffle, which was incredibly flavorful with that sauce, and the berry pancake melt, which was delicious and perfectly balanced. My brother ordered the Lomo Saltado, and it was outstanding as well. I highly recommend making an OpenTable reservation in advance, as there was a long line and our walk-in wait time was about 40 minutes. Our server was extremely kind and accommodating—when we asked to change tables because our original one was near the door, she graciously allowed us to move, even during a very busy time. Excellent food, wonderful service, and a great overall experience."

"My friends always share about this place on their socials and my hubs and I finally got the chance to give it a try. Oh my goodness. SO GOOD! The ambience is lovely and chic, very clean, and bursting with artistic expression—especially in their food. I got the cinnamon signature coffee and their stuffed ham and cheese croissant; my husband got their chocolate milk and chicken and waffles. Incredible. The presentation was top notch, so beautiful I didn’t want to eat it 😅 Even the chocolate milk was an otherworldly experience. The chicken and waffle was served with rosemary leaves (I think) and the waitress burned it upon serving to give an amazing touch. Our waitress, Neila, was very attentive and professional. Would definitely come back and recommend to all!!"

"This is an unassuming place with the best brunch around. I'd give it more than 5 stars if I could. An incredible vibe you feel when you walk through the doors. You scan the QR code to see the menu and they come by to take your order. We got something savory and something sweet to share and it was the perfect combination. Everything is presented beautifully and has rich flavors. We had the stuffed bacon cheddar croissant with the most loved berry pancakes. Will have to come back to try the pistachio pancakes, churro pancakes, and Nutella pancakes. Even the bathroom was a glorious experience! We are here as snow birds but this place may convince us to live here year round!"

"We came to Bistrology as a group and had such a great experience. The pistachio coffee was unique and delicious — rich, smooth, and perfectly balanced. Mary Ann was a very attentive waitress. The coffee pancakes were a standout as well, flavorful and indulgent without being too heavy. The atmosphere was welcoming and perfect for a group brunch, and everyone at our table enjoyed their meals. Would definitely come back and highly recommend!"
