"Austin had a table set up in downtown Eagle for people to buy coffee. I don't remember which roast I had, but it was sooo good. I went to their website and ordered 3 different roasts. All of them are delicious and smell great too. The roast date on the bag was 2 days before they were delivered! So fresh, so good, and local. You gotta try it"
"Austin and Amber are the co-founders of Epiphany Coffee Company. I attended two classes they offered through the Boise Co-Op. The first was “Home Coffee Brewing 101.” The second was “Cold Brew Coffee 101.” I learned more from these 2 classes than I knew from DECADES of making coffee at home! Austin is an excellent instructor, maybe due to his earning a Masters Degree in Education. He explained the chemistry and physics of coffee making in a way we could understand. After taking the classes, every day I look forward to trying something new in brewing my coffee. Austin gave us his scale (a spectrum) that goes from sour on one end of the spectrum to sweet in the middle of the spectrum to bitter on the other end of the spectrum. I brew my coffee trying to find that “sweet spot” for my own unique palate. I try different weight ratios of water to coffee. I try different grinds of coffee beans. I try different coffee beans from Epiphany Coffee Company. I try French press pot, electric coffee machine, and cold brew methods. It’s like running a different experiment each day, a fun task I look forward to doing! I purchased a Baratza Encore conical burr grinder through Epiphany Coffee Company’s website. Austin recommended it in the classes. It has made a HUGE difference! For one example, there is no “sludge” in the coffee I brew using a French press pot. For another example, the flavor extracted from the coffee is so much richer, because the consistent grind forces the water to interact with ALL of the coffee grinds, not just the coarser grinds when using a blade grinder. Another lesson I learned was to use a scale to weigh the water and the coffee for a consistent result. A third lesson I learned was to use spring water (with minerals), not tap water, because tap water has chlorine, and coffee is an aroma sponge. The coffee will pick up the chlorine taste from tap water. So far, my favorite coffee has been the “Radiate” blend of Epiphany Coffee Company brewed in the Alto cold brew system purchased through Epiphany Coffee Company. I have never tasted better coffee! The lessons that Austin taught me have made a world of difference in my enjoyment of coffee. Thank you, Austin and Amber!"
