Her goal? To create a culinary “lab” (hence the name Chewology) where textures and flavors meet in creative ways. We started with an Oolong Sling (light and floral) and a beer for balance 🍹🍺. To get the full experience, we went family style — sampling a bit of everything: 🥚 Dressed Egg, 🥗 Spring Greens & Yuba, 🍗 Taiwanese Fried Chicken (two sauces, extra charge), Gua Bao, 🍚 Lo-Bah-Png Pork Belly Fried Rice, and finally, the sweet Bao Bits for dessert. While everything was good, there wasn’t one standout dish that wowed me. The fried rice was a bit soggy for my taste, though the flavors were still comforting. What did shine was the creativity behind the menu and the care in presentation — you can tell the dishes are thoughtfully made. "A bit upscale, pleasant, clean, modern atmosphere. A touch of accent lighting and neon, some live edge wood, and other decor appropriate to a Taiwanese restaurant. On the main drag in Westport. It is the type of place that serves interesting small plates with very small portions, as well as some main dishes. The Three Cup Mushroom Ramen was excellent, so long as you enjoy mushrooms. A slightly sweet and pleasant complex of flavors, pretty sure I tasted garlic oil among other nicely balanced flavors. The Tofu Bao was quite tasty, a nice lightly sweet sauce, with cilantro, fried and pickled onions giving it a pleasant contrast. The Spring Greens and Yuba were, interesting and pleasant, but having tried them I probably would have gone with another option. The mochi for dessert is the gooey kind, small bites with ice cream inside. They had sesame and lychee, which were each very subtle in flavor. Pleasant enough, although the texture is a little weird. The service was friendly and seemed genuine. I would expect to spend more than the prices would suggest, as you probably need to order a handful of small plates per person. The ramen portion might be enough depending on your appetite. They seemed to expect reservations, although we picked a quiet night. I would say it is definitely worth giving a try for the right occasion."

"We had such a great experience at Chewology. Our server, Hunter was so kind and explained the menu and the chef’s background to us as it was our first time visiting. My partner had the sesame chicken noodle entree and loved it. I had a tofu dish and the tofu was so delicious even my carnivore boyfriend wanted more. He had a cocktail that was delicious and I had a hibiscus mocktail that made up for not being able to drink as I’m currently pregnant. We also got the cheesecake for dessert and it was perfect. Every dish was creative and cooked to perfection. The drinks were balanced, unique and complimented the food perfectly. We can’t wait to go back."
