"Great newly-opened bakery. They still need to smooth out a few kinks, but even in its current state Sophistiqué is one of the best bakeries in the valley. Their laminated pastries separate cleanly into layers and bake into a super crispy flaky shell. I recommend the kouign amann and financier. When I had the plain croissant, it had a gritty texture from the fat and a slight raw flour taste in the center even though it was fully cooked. I suggested a few possible causes, but the owner’s response made it clear my suggestions were wrong. Then perhaps the freezing cold weather messed with the croissant? I’ll have to try heating it up in the air fryer next time. I’m being nitpicky, but really the croissants were technically sound, and I don’t think the city has any other bakery close to this caliber. Please support this bakery! The city needs it."
